let's talk grub - a new year detox

After years of studying the mysterious entity that is my body, I've discovered that while I can't handle restricting starches long-term, a week to two week detox of sorts, especially after the holidays, does my body good. And so this past Monday I loaded up on veggies, lean meats and a few "splurges" and determined to explore as many options as possible with a smaller artillery of ingredients. Two favs that I just have to share, and believe you'll find noteworthy regardless of whether you're detoxing from starches or not: mini cups o' fun and a club sans bread sandwich.

mini-cups o' fun
7-8 eggs
1/2 - 1 cup shredded cheese
fixings: last time I used 3 links of chicken apple breakfast sausage and some diced onion. Have also used turkey italian sausage, sauteed onion and spinach.
1 Tbsp fat - oil or butter

Saute any fixings until soft and golden in 1 Tbsp of oil or butter. Meanwhile whisk eggs in a large bowl. Add sauteed ingredients and cheese and stir. Ladle into mini muffin pans sprayed with non-stick spray(will make 2 pans with cups filled to the top). Bake in oven at 350 degrees for approx. 15 minutes. The mini "egg"cakes can be stored in refrigerator for one week. Warm in microwave for breakfast or snack. (side note: can also use regular muffin pans--just up that time to 20 min or until toothpick comes out clean)

club sans bread sandwich
2 leaves of romaine hearts (or any other preferred lettuce)
turkey (I used some nitrate-free organic turkey from Whole Foods)
cheese (I used organic cheddar from WF)
3 slices of bacon (can use turkey bacon but I went whole-hog--hahaha)
mayo
1-2 Tbsp coleslaw

Cook the bacon (I cook my bacon in a 400 degree oven now thanks to my brilliant mum). Then layer onto lettuce leaves a small swab of mayo, followed by turkey, cheese and 1 1/2 slices of bacon. Dollop on top 1-2 Tbsp of coleslaw. I kid you not, this combo is amazing and you won't miss the bread. I have a pickle and some yummy cherry tomatoes on the side.
