Last week I began sharing publicly about my all out love affair with Gina at skinnytaste.com. Well I still haven't stopped gushing over such de-lish-es-ness as cilantro chicken salad, low fat rice krispy treats, pumpkin pie dip and more! Last night I cooked up her taco chicken chili recipe and just about pledged my allegiance to it while moaning over heaping spoonfuls that also contained her mexican rice recipe. Let me just say that I will NEVER eat rice without cilantro and lime again---NEVER!!! Ok, that sounds a tad over-dramatic I'm sure, and there must be cuisine for which that sort of rice recipe is not appropriate........but right now I really don't care about those recipes :). All right, all drama aside, I want to re-post half her website at this point but feel it's much wiser to send you to her as she has beautiful pics of all this yumminess and it's easy to search her site for whatever your taste buds are yammering.

Here's a complete recap of recipes tried and adored:
1. nojitos (i.e. an alcohol-free, guilt-free version of a favorite summer drink--think "Caribbean-in-a-glass")
2. pumpkin pie dip (This may be fall-inspired, but as far as I'm concerned, fall should be all year round)
3. santa fe chicken (slow cooker recipe. one word: ri-dic-u-lous)
4. taco chicken chili (another slow cooker recipe. total satisfaction)
5. low fat rice krispy treats (I added 3/4 cup of mini semi-sweet choco chips...just because :)
6. scallion cilantro rice (aka mexican rice. obscenely good.)
7. cilantro chicken salad (stuffed it in some medium-sized tomatoes. forget about it.)
8. baked bananas (already obsessed over this in previous post)
